Cynara cardunculus var. scolymus
Artichoke, Cynara cardunculus var. scolymus, is a bold perennial vegetable with a broad, thistle-like presence. Reaching about 4 feet tall and 4 feet wide, it earns a permanent-looking place in a sunny food garden rather than a narrow annual row. Harvest runs from late spring into midsummer; unharvested buds can carry the display into its midsummer-to-late-summer bloom period.

The mature spread is about 4 ft (1.2 m), so plants set at that distance grow together into a solid mass.
Treat 3 ft as a planning baseline — cultivar and local growing conditions shift the final footprint.
Give artichoke an open position at the back or outer edge of a bed, where its height will not crowd shorter crops or narrow circulation. It works especially well as an anchor at a bed corner or beside a wide path, with its substantial foliage facing open ground instead of a fence or doorway.
Set plants 3 feet apart, center to center, then plan each one as a plant that can occupy a roughly 4-by-4-foot footprint at maturity. That difference leaves little spare room once plants fill out, so avoid placing paths, low edging, or another large perennial directly between them. In a small layout, use one artichoke as a focal plant rather than trying to pack several into a standard vegetable bed.
Place artichokes in full sun, in rich, well-drained soil that stays evenly moist. Regular watering suits the large leafy clump, especially where the bed dries quickly in summer. A sheltered site is useful where strong winds can catch the tall flowering stems, but keep the planting area open enough to accommodate its full spread.[1][2]
Treat the bed as seasonally occupied for more than the harvest window. Buds are ready from late spring through midsummer, followed by blooms from midsummer into late summer if some heads remain uncut. In colder parts of its range, use mulch for winter protection and avoid assigning that bed space to crops that need to be planted through the artichoke clump’s return in spring.
