Lepidium sativum
Garden cress is a compact annual vegetable for quick turnover in a productive bed. Its peppery young growth is ready in about 15 days, making it useful where an early crop can occupy a small strip before another planting needs the space. At roughly 1 foot tall and 6 inches wide, it stays low enough for the front edge of a vegetable bed, provided taller neighboring crops do not shade it.
Give garden cress a dedicated ribbon along a path-side bed, the open edge of a raised bed, or another place that is easy to sow and cut repeatedly. Keep it in full sun and within easy reach for frequent harvesting; its short crop time makes access more useful than reserving a large permanent plot. Sow small sections in succession from spring into fall rather than filling an entire bed at once. As one section is harvested, the next can be coming along nearby.
Space plants 3 inches apart, center to center, for a close, efficient stand of young growth. Individual plants can reach about 6 inches wide, so treat the planting as a continuous narrow patch rather than a row of isolated specimens. Leave a clear working edge beside the patch for sowing and harvesting, especially if it borders a path or shares a bed with slower crops. A 1-foot-tall mature plant should remain in front of taller vegetables.
Place this crop where it receives full sun and can be watered regularly without crossing other plantings or compacting the bed. A spot near a hose, irrigation line, or regularly tended kitchen-garden path makes its routine care simpler. Avoid placing it beneath crops that will quickly cast shade across its small footprint, particularly when sowing later in the season.
Garden cress occupies the garden briefly, with harvests possible from spring to fall and young growth ready in about two weeks. Use that speed to fit it between slower plantings or to refresh an empty edge of the bed. Repeated small sowings in cool weather keep the planting active without tying up one area for the full season. Clear finished patches promptly when the next crop needs the space.
