Potato is an annual vegetable grown for its underground tubers, with foliage reaching about 2 feet tall and wide. It occupies a bed from planting through an early-summer-to-fall harvest window, so reserve the space as a dedicated seasonal crop rather than a short-lived gap filler. The growing plan needs to accommodate repeated soil hilling as stems lengthen and a careful final dig.

Place potatoes in a full-sun bed where the soil can be mounded without spilling onto a path or crowding neighboring crops. A long row or broad strip works well when one side remains reachable for hoeing, hilling, watering, and harvest.
Set seed pieces 12 inches apart, center to center. Although each plant can make a leafy mound about 2 feet across, close in-row planting creates a continuous potato run rather than isolated plants. Give the row a reachable edge and leave unplanted soil beside or between runs for drawing loose soil toward the stems. Avoid placing delicate low crops at the base, since hilling enlarges the working footprint as the season progresses.
Use a sunny site with loose, well-drained soil that is deep enough to work into a hill. Begin pulling soil toward the stems after shoots emerge, then repeat as plants grow; the finished ridge may hold 6 to 8 inches of added soil. Keep moisture even while tubers enlarge, since dry spells and uneven watering can interfere with tuber development. Mulch can help conserve moisture while leaving room to maintain the hills.[1][2]
Potatoes take about 100 days to maturity, with harvest extending from early summer into fall. Plan the bed as occupied for most of the growing season, even if a few young tubers are lifted earlier. At harvest, use the path-side access or open bed edge to loosen soil beyond the foliage footprint, reducing the chance of cutting developing tubers with a fork or hoe.
Do not rely on a compact, fixed outline for this crop. The foliage is modest in height, but the bed needs extra bare-soil allowance for hilling and for lifting tubers at the end of the season. Hard, compacted ground can lead to misshapen potatoes, so locate the crop where the soil can be loosened before planting and where irrigation can be applied regularly without wetting adjacent paths.[1][2]
